
紅雁白玉鮑魚扎
冬瓜有清熱生津之效,可配搭各式食材,煮法多變。今次請來凱悅軒主廚盧貴溪師傅示範紅雁白玉鮑魚扎,紅雁是燒鵝,白玉指冬瓜肉,此菜式賣相精緻,味道豐富,是一道消暑妙品。

清甜多汁 消暑佳品
冬瓜性寒味甘、清甜多水,適合各式煮法,如炮製冬瓜盅、冬蓉羹、冬瓜粒湯飯等。盧貴溪師傅表示,其家鄉佛山更會以荷葉和冬瓜泡水飲,有清熱功效。盧師傅今次示範的紅雁白玉鮑魚扎,特別用上燒鵝肉,以突出冬瓜的清甜味道,是夏日佐飯的佳品。
首先選擇結實、飽滿的冬瓜,去皮切片。然後用冬瓜片包捲燒鵝肉、鮑魚和甘筍等材料,蒸好後淋上芡汁即成。這道菜材料豐富,清甜的冬瓜有助化去燒鵝肉的油膩感,爽脆的甘筍與彈牙的鮑魚,豐富了菜式口感,金華火腿的鹹香令人增進食慾。除了選用新鮮鮑魚,蟹柳、青瓜、燒鴨等亦可用來入饌,視乎大家口味而定。

製法

1.冬瓜去皮切薄片,汆水瀝乾備用。

6.冬瓜薄片包捲冬菇、燒鵝、甘筍、鮮鮑魚和金華火腿。

7.用芫荽將冬瓜卷紮實,置碟上。

10.燒熱雞湯,下粟粉煮至稠身,淋在冬瓜卷上即成。
