
意式芝士筒配雪葩
意大利人嗜吃芝士的程度不下於法國人,以芝士入饌的菜式由頭盤、意粉、薄餅至甜品都有,而且款式多變。今期由意籍總廚Paolo Federici示範意大利西西里島的地道甜品,以麗克塔芝士製成的意式芝士筒,外脆內軟,伴以朱古力醬和雪葩同吃,非常可口。

Paolo Federici來自意大利北部布雷西亞省,曾於當地、加拿大及香港著名意菜館擔任行政總廚,現為金域假日酒店意菜館Osteria主廚。
經典甜品 層次豐富
位於意大利南部的西西里島,擁有歐洲最大和最高的火山,乃著名旅遊勝地。西西里島四面環海,陽光充沛,除出產具風味的葡萄酒、橄欖油外,亦有以牛奶、羊奶製成的芝士。西西里人的飲食文化源遠流長,以甜品最為聞名,這款Cannoli Roll芝士筒正是經典之作;餅筒炸至香脆,內為軟滑不鹹的麗克塔芝士餡,伴雪葩同吃,一冷一熱,層次豐富。
意籍總廚Paolo Federici表示,炮製前必須先購買製餅的有關金屬模具,利用這些模具把餅皮製成卷筒狀,然後放入熱油內炸至成形。坊間有多款麗克塔芝士供應,他推介意國的出品,當中以羊奶製的芝士最為美味。

製法

1.麵粉、牛油、糖拌勻後,加入雞蛋攪拌10分鐘成麵糰。

2.以保鮮紙包裹麵糰,冷藏30分鐘,取出。

3.把麵糰擀平薄。

6.以攝氏170度熱油炸三分鐘,備用。
