
鮮土茯苓煲豬月展
天氣乍暖還寒,加上極潮濕,最適宜飲用祛濕湯水。在一眾湯料食材中,性平味甘的土茯苓,具祛濕解毒之效。故今期請來帝苑酒店中菜行政總廚何偉成師傅,介紹如何製作鮮土茯苓煲豬湯,製法簡單,乃健怡的春日湯水

汆水可減苦澀味
具有食療功效的土茯苓,與扁豆同樣能祛濕,加入豬、蜜棗和果皮來煲湯,即成為一道簡單易做的時令湯水。何偉成師傅建議選用新鮮的豬,先汆水便可去除血腥味。鮮土茯苓以粗壯為佳,但一般在街市所買到的,已被菜販切成薄片,因此應使用表層仍帶有滑潺和質感黏稠的貨色,洗淨後才用來熬湯。 鮮土茯苓略帶苦澀味,汆水後,顏色變淺,苦味會隨之減少。當中的湯料果皮,經長時間風乾,藏有不少塵埃,所以必須浸軟清洗乾淨才使用。煲湯時先下扁豆、蜜棗、果皮及土茯苓煲一小時,最後才放豬,謹記以十二碗水煲成六碗水即成。

鮮土茯苓 1斤 | Fresh glabrous greenbrier 1 catty |
豬 1斤 | Pork shin 1 catty |
扁豆 5錢 | Hyacinth bean 5 tsins |
蜜棗 3粒 | Preserved Chinese Jujube 3 |
果皮 1片 | Dried tangerine peel 1 |
水 12碗 | Water 12 bowls |
鹽 適量 | Salt some |
製法

1.將鮮土茯苓洗淨。

2.把鮮土茯苓於滾水中汆水一分鐘。

3.撈起鮮土茯苓,瀝乾。

4.用滾水將豬汆水約2分鐘。

5.把蜜棗洗淨及瀝乾。

6.把扁豆洗淨,瀝乾。

7.果皮浸軟後洗淨及瀝乾。

8.煲內注清水,加扁豆、蜜棗、果皮及鮮土茯苓,大火煲一小時。

9.將豬放入煲內。

10.以慢火熬兩小時三十分鐘,加鹽調味即成。
