
蟲草花炒鴨柳
潮濕的春季,令人常感飽滯,胃口欠佳。不妨以祛濕食材,弄幾道惹味小菜醒胃。令次特請來朗豪酒店明閣的大廚陳漢章師傅,教大家烹調適合春天食用的蟲草花炒鴨柳,既能養生祛濕,而且滋味無窮。

清熱祛濕 時令佳餚
春天天氣潮濕,很容易令人胃口大減,在炮製菜式時需要多花心思,所以今次陳漢章師傅特教大家製作清熱祛濕的蟲草花炒鴨柳。不少中式食材都有祛濕功效,例如豆類、薏米、冬瓜、鴨、鵪鶉等,但一般多只會用來煲湯,變化不多。陳師傅卻想到用鴨肉,配以蟲草花同炒,炮製具祛濕功效的菜式。
蟲草花是一種外表跟冬蟲草極為相似的菌類,多由人工培植,性質平和,而且不寒不燥,一家大小都適合食用。很多人喜歡用蟲草花煲老鴨,取其清熱祛濕,原來將這兩種材料連同西芹、雜椒等炒香,更為滋味。鴨柳在炒前應先走油,想吃得健康,走油後可用滾水再煮一會,去除油分,或只氽水不走油亦可,目的是去除鴨柳羶味。
另外,酒樓大廚常會用炸雀巢盛載炒物,這種香脆可口的伴碟小食,也可自家製作。捨棄一般採用的芋頭絲,在超市購買軟身的烏冬,排放在大碗底部,冷藏五分鐘後炸香,跟炸芋頭絲一樣卜卜脆,製法簡易。

雞上湯 適量 | Chicken Soup some |
油 適量 | Oil some |

製法

把蟲草花用上湯浸泡五分鐘。
Soak the cordyceps sinensis with chicken soup for 5 minutes.

蟲草花連上湯蒸約七分鐘後,瀝乾。

西芹、雜椒、冬菇、薑切絲。

鴨柳切絲,加鹽、豉油略醃三分鐘。

烏冬放大碗內排好,冷藏五分鐘後,落鑊炸成雀巢狀。

鴨肉落鑊走油三十秒。盛起。

再將鴨肉氽水三十秒後,隔水備用。

西芹、雜椒及蟲草花用適量上湯略煮一分鐘,瀝乾。

燒熱油鑊爆香薑絲及蒜蓉後,與冬菇炒勻。

加入所有材料,炒勻後放在炸烏冬雀巢上即成。
